Easy Blueberry Waffles
Did you know blueberries are native to North America? No wonder it's one of the easiest fruits to get year-round. And, with its unique flavor profile, blueberries make an excellent addition to any baking recipe — which is why our blueberry buttermilk pancake mix deserves a highlight.
We recently turned that delicious pancake mix into a (insert drumroll, because we're really proud of this) blueberry waffle! It was absolutely delicious. The all-natural blueberry nuggets from the mix help every bite burst with the sweet and tart flavor of blueberries and the whipped cream adds a delightful lightness to the stack of waffles. Blueberry Waffle Recipe
Ingredients:
For the Waffle:
- 2 cups of Lehi Mills Blueberry Buttermilk Pancake Mix
- 2 cups of water
- 2 tablespoons of blueberry jam, warm
For the Whipped Cream:
- 2 cups of heavy cream
- 1/2 cup of powdered sugar
- 1 teaspoon of vanilla
- 1/4 cup of blueberry jam, stirred
Directions:
For the Waffle:
- In a medium bowl, combine the blueberry buttermilk pancake mix and water and stir until just combined. Swirl in the warm blueberry jam into the batter before pouring it into a preheated waffle maker.
- Remove the cooked blueberry waffle from the waffle maker and repeat for the remaining batter.
For the Whipped Cream:
- In a chilled bowl, whip the heavy cream and vanilla for 3 minutes before adding the powdered sugar.
- After it has set, and stiff peaks form, fold in the blueberry jam (make sure the jam is more liquidy).
- Stack your blueberry waffles and top it with a large helping of whipped cream (it's delicious). You can also drizzle blueberry jam on top of the stack.
