Follow these tips for the best lemon muffins you can bake:
Simple Mixing Tips
Avoid overmixing your batter
Absolutely no one wants a dense, flavorless muffin that’s not baked all the way through. Overmixing your muffin batter can cause your muffins to turn out all wrong. Be sure you’re just mixing that batter long enough for the dry mix to become moist. And yes, that means there will be some lumps in the batter. But don’t worry, it will turn out just fine.
Let the Batter rest
While letting your batter rest is easy, it’s no fun waiting longer to take a bite of a moist muffin that’s full of flavor. But give it just 30 minutes and you’ll notice your muffins rise higher and taste better. That’s because the flour absorbs more of the moisture and you’ll notice the difference.
Easy Baking Tips
Fill the muffin cups higher
If you’re looking for extra tall muffin tops, don’t skimp on filling your muffin cups. Fill those almost to the top and see the muffin rise to their greatest heights.
Adjust the baking temperature
If you just follow the traditional temperature on the directions, you’re going to get some great muffins. But if you want those muffins to rise a little higher and develop even more fluffiness inside, try adjusting the temperature part of the way through baking. We recommend preheating the oven to 425 degrees farenheit and bake your muffins for the first 5 minutes at this temperature. Then lower the temperature to 375 degrees fahrenheit and bake for the remaining 11-13 minutes.
By starting at a higher temperature, your muffins will rise faster and then bake just right when you lower the temperature.
Let the muffins rest before removing them
We know once those muffins are out of the oven you’re going to be so excited to eat them. But just give them a little time before removing them from the tin. Let them cool for 10-15 minutes and you will still get to enjoy a warm muffin but it will be more moist and fluffy so you know it will taste better.
Delightful Muffin Variations
Include a Topping
Sprinkle Coarse Sugar on Top
Just before sliding that muffin tin into the oven, sprinkle a good amount of coarse sugar on top. This will add sweetness and a slight crunch that’s just divine.
Add a Crumble Topping to Your Lemon Muffins
If you’re looking for an extra little bit of crunch with added sweetness more than just sugar, you’ve got to try adding a crumble topping to your muffins. It adds the perfect texture and gives your muffins a bakery-style look that is simply amazing.
Here’s a simple crumble recipe to try:
• 4 tablespoons of sugar
• 4 tablespoons of flour
• 1 teaspoon of cinnamon
• 2 tablespoons of butter
For the crumb topping, combine the sugar flour, and cinnamon. Cut in the butter with a fork until crumbly. Sprinkle over muffins before baking.
Drizzle with a Glaze
Whether or not you opt for a crumble on top of your muffins, you’ve got to try making muffins with a yummy glaze. A glaze is the perfect addition to elevating your muffins and you can add all kinds of flavors. Here are a few glaze options we absolutely love:
Lemon Glaze
