How to Make Cheesecake Pancakes

The recipe alone may sound intimidating, but it isn't much different than your regular pancake recipe. Your pancakes will be enhanced with ricotta cheese and pastry flour.

After you make your pancakes, you'll make the cheesecake filling which is no more than four ingredients. And one of those ingredients is optional!

You'll then top off your assembled breakfast with graham crackers and icing sugar. These toppings give texture and extra flavor to your dish.

There are plenty of ways to simplify the recipe or change it around. For example, if you don't want to create your own pancake mix, then you can buy a good-quality pancake mix.

It is recommended to make your own since this recipe includes ingredients that give an authentic cheesecake flavor.

You may also add any toppings you want. If you want chocolate chips or strawberry sauce, it can only improve the recipe.

Ingredients for Cheesecake Pancakes

Cheesecake pancakes have a few different ingredients, but the measurements of each part are very small. There are some ingredients in this recipe you might not have in your pantry, so you may have to buy them.

Here is a list of the ingredients you'll need for both the pancakes and cheesecake filling:

  • Pastry Flour - has a lower protein content so it gives fluffy and voluminous results
  • Baking Powder - do not use baking soda as a substitute
  • Sugar - white granulated sugar
  • Salt - you only need a pinch
  • Eggs - only one egg for this recipe
  • Milk - whole milk is recommended
  • Ricotta cheese - is normally used in cheesecake and it will enhance the flavor of your pancakes
  • Vegetable oil - do not substitute with olive oil
  • Vanilla Extract - a good quality vanilla extract is recommended
  • Graham crackers - you only need a few for sprinkling on top
  • Butter - use unsalted butter, leave aside more to cook your pancakes with
  • Icing sugar - to dust on top
  • Cream cheese - regular cream cheese is recommended
  • Whipping cream - heavy whipping cream gives a thicker result
  • (Optional) Lemon juice/zest - to add a bit of flavor to both your pancakes and cheesecake filling

If you're wondering where to buy cheesecake pancake ingredients, a top-quality bake shop is your best bet. These shops have ingredients that supermarkets or grocery stores don't such as whole wheat waffle mix.

For example, if you're looking for cake flour near me, a bake shop will have a wide variety for you to choose from rather than a single option from your local grocery store.

Baking Tips

If you've ever cooked pancakes before, you know that they are finicky. If you're a few seconds early to flipping, the entire shape of the pancake falls apart.

Before anything else, make sure that your ingredients are at room temperature. Leave your cream cheese, egg, butter, and ricotta cheese out on the counter before adding them to your mix. This allows your ingredients to combine more thoroughly.

When mixing your batter, be careful of overmixing. Those bubbles in your batter are important and need to stay there. They give your pancakes that light and fluffy effect.

If you overmix, you're overworking the gluten. Those bubbles then disappear and you'll be left with full, dense, and flat pancakes.

After your batter is complete, let it rest for about 20 minutes. The chemical reactions within the ingredients need to take place.

Keep your batter in a room temperature environment, or even put it in the fridge if your kitchen is too hot. This is technically an optional step, but it provides the best results.

When flipping your pancakes, do not try any fancy tricks from the movies.

This means no high tosses in the air!

If you want fluffy pancakes, then just as when you were mixing the batter, try not to knock the air out of them. First, you'll create a mess in your kitchen by trying new tricks. But also, the hard landing on the pan pops the air bubbles in your mix.

Pancakes

  1. Sift your dry ingredients together in a medium bowl (flour, sugar, baking powder, and salt)
  2. Add in your lemon zest (Optional)
  3. In another bowl, mix together your milk, ricotta, oil, egg yolk, and vanilla extract
  4. Pour your wet mixture into your dry mixture and mix until combined
  5. Whisk your egg whites in a separate bowl until they form stiff peaks
  6. Fold your egg whites into your batter
  7. Let your batter sit for 20 minutes at room temperature
  8. Melt your butter over medium-low heat in a pan
  9. Spoon your batter in using a ¼ cup measurement
  10. Cook your pancakes until bubbles appear on the surface and the edges darken, then flip
  11. In a bowl, combine crushed graham crackers with your melted butter and set aside

Cheesecake Filling

  1. Beat cream cheese and sugar together until smooth (add lemon juice if you desire)
  2. Add whipping cream in gradual stages
  3. Continue to mix until well combined and stiff

Now you're ready to assemble your dish. In between each pancake, spread a generous layer of cheesecake filling. You might even add some crushed graham cracker in there, but you don't have to if you don't have enough.
