1. YouTube Carmelita's

Carmelita's are probably one of the most addictive cookie bars we've ever created, which is why we decided to share this with everyone on our YouTube channel. We've embedded the video so you can follow along at home while Sheri makes this easy recipe! Don't worry if you get lost either; we included the ingredients and directions below so you can come back again and again to this delicious cinnamon-y treat whenever the craving strikes.

Ingredients:

  1. Preheat the oven to 350F.
  2. Combine the cookie mix and melted butter in a medium bowl, and stir until well incorporated.
  3. Press half of the cookie mixture into the bottom of a greased or lined 8x8 pan and bake for 10 minutes in the preheated oven.
  4. In a saucepan, melt the caramel and cream on low heat until combined. Once melted, remove from heat. Important note: don't bring the mixture to a boil, as that will change the caramel consistency.
  5. Remove the cookie pan from the oven and add the chocolate chips to the top of the cookie bar. Pour the liquid caramel mixture over the top of the chocolate chips.
  6. Use the remaining cookie dough and press (or crumble) it over the caramel layer and bake for an additional 15 minutes.
  7. Remove from oven and let the carmelita's cool before cutting into squares and consuming.

2. YouTube Pancake Sheet Cake

Pancake Sheet Cakes are a great idea for those moments when you have a ton of guests over for breakfast, but don't want to spend hours in front of a hot griddle flipping pancakes. This YouTube video and recipe is super simple and quick, so it's perfect for any last minute breakfast crowds you might have!

Ingredients:

  1. Preheat the oven to 350F.
  2. Combine the pancake mix and water in a large bowl.
  3. Pour the batter into a greased cookie sheet and top with the toppings of your choice. We usually (figuratively) split the cookie sheet into 4 sections and top each quadrant with a different topping (like bacon chunks, chocolate chips, blueberries, and raspberries.
  4. Bake for around 20 minutes (depending on the size of your pan). Poke mixture with a toothpick to ensure it's cooked through.
  5. Remove from oven and let cool slightly before slicing and serving to your family or guests. You can eat each pancake with maple syrup, powdered sugar, or plain!

3. YouTube Skillet Cookie

We are totally obsessed with this YouTube recipe! Skillet cookies are so simple to make, but the resulting dessert is simultaneously gooey and crispy (we're literally drooling just writing about this). Trust us, this recipe is a fantastic idea anytime, but especially during the summertime.

Ingredients:

  1. Preheat the oven to 350F.
  2. Combine the chocolate chip cookie mix, butter, and water in a large bowl. We recommend using your hands to knead the dough together.
  3. Press the cookie dough into a seasoned cast iron skillet.
  4. Bake for 14 - 16 minutes in the oven (for a small cast iron pan) or 25 minutes (for a medium/large skillet).
  5. Once cooked, remove from the oven and let cool before topping with ice cream, syrup, and sprinkles.

4. YouTube Sweet Ice Cream Waffle

Imagine, after a long day, sitting down on the couch and biting into a sweet waffle topped with your favorite ice cream and sprinkles. That's exactly why we created this YouTube recipe!

Ingredients:

  • 2 cups of Lehi Mills Belgian Waffle Mix
  • 1 1/4 cups of sugar
  • 1 teaspoon of salt
  • 1/2 cups + 3 tablespoons of heavy cream
  • 4 eggs
  • 1 teaspoon of vanilla

Directions:

  1. Preheat your mini dash or waffle maker.
  2. Combine the waffle mix, sugar, and salt in a large bowl. Stir in the heavy cream, eggs, and vanilla.
  3. Pour 3 tablespoons of batter onto the dash and cook for 60 seconds or until golden brown. Remove from the waffle iron or dash and add a scoop of ice cream and your favorite toppings to the waffle before enjoying!

5. YouTube Peach Cobbler Cookie

Peach season lasts the entire summer, right? This bite-sized version of a peach cobbler is a recipe you need to bookmark, because we already know you'll be coming back to it repeatedly.

Ingredients:

Directions:

  1. Preheat the oven to 350F.
  2. Combine the cookie mix, butter, peaches, and egg in a large bowl. Use your hands or a spoon to stir together all of the ingredients. Note: due to the peach juice, the cookie dough will likely be wetter than a traditional cookie dough.
  3. Scoop a 2-inch cookie onto a greased or lined cookie sheet.
  4. Bake in the oven for 10 - 15 minutes, or until the cookie is cooked through.
  5. Remove from the oven and let cool before enjoying!
