2 Fun Copycat Cookies Recipes for your Summer!

While that can make for a good marketing strategy, some of us cookie addicts in the making need our next sugar fix today!
With cookie addictions in mind, we worked hard to figure out different copycat cookie recipe ideas you can make in your kitchen whenever you want, all from our cookie mixes. No need to wait for the next time your favorite cookie comes on the menu!

Key Lime Copycat Cookie
Ingredients:
- 1 package of Lehi Mills Sugar Cookie
- 1 cup of butter, softened
- 3/4 cup of water
- 2 tablespoons lime juice
- 3 tablespoons lime zest
- 1/4 cup of sugar
- 2 limes
For the Buttercream:
- 1/2 cup of butter, softened
- 2 cups of powdered sugar
- 1 1/2 teaspoons of vanilla
- 3 tablespoons of milk
- 1 tablespoon of lime zest
Directions:
- Preheat the oven to 350 degrees.
- In a medium bowl combine sugar cookie mix, softened butter, and water. Use a kitchen mixer or your hands to start to knead the dough together. While kneading, add in the lime juice and lime zest.
- On a floured surface, roll out the sugar cookie dough to 1/4 inch thickness. Use a circle cookie cutter to punch out cookie disks, and place them on a greased or lined cookie sheet.
- Sprinkle 1 tablespoon of sugar on top of the uncooked cookie before placing the cookie sheet in the oven. Bake for 8-10 minutes and remove from oven once finished.
- In a small bowl, beat together the buttercream ingredients for 2 minutes. Spoon the mixture into a piping bag and carefully pipe it onto a cooled cookie.
- Top your key lime copycat cookie with a lime wedge; before consuming, we recommend squeezing the lime wedge onto the cookie!
Lemon Zest Copycat Cookie
Ingredients:
For the Cookie:
- 1 package of Lehi Mills Sugar Cookie
- 1 cup of butter, softened
- 3/4 cup of water
- 2 tablespoons lemon juice
- 3 tablespoons lemon zest
For the Buttercream:
- 1/2 cup of butter, softened
- 2 cups of powdered sugar

- 3 tablespoons of milk
- 1 tablespoon of lemon zest
