Afterschool Snacks - Easy Ideas to Feed Your Hungry Students after School
If you’re a parent of school-aged kids, you know at any age they are looking for something tasty to enjoy after a long day of school. And few things leave a better impression when they’re older than remembering those treats after their exhausting day of learning.
That’s why we want to share our favorite afterschool snacks that are easy on you and amazing for them to enjoy.

Brookie
Combining brownies and cookies just might make the year for those kids you’re feeding after school. And it’s so fun and super easy to elevate both. And of course, with Lehi Mills, we make it super easy.
Here’s the recipe to make tasty brookies for a fabulous afterschool snack.
Ingredients:
1 Box of Lehi Mills Double Fudge Brownie Mix
½ cup of Water
⅓ cup of Oil
1 Egg
2 ½ Cups of Lehi Mills Chocolate Chip Cookie Mix
½ cup of Butter
3 Tablespoons of Water
Directions:
Preheat your oven to 350 degrees F
Combine the brownie mix, water, oil, and egg and mix for 2 minutes
Pour the brownie batter into a greased 9x13 pan
In a seperate bowl, combine the chocolate chip cookie mix, butter, and water
Spoon or place chunks of chocolate chip cookie dough on the brownie batter
Bake for 25-30 minutes
Remove from the oven and let cool before slicing and serving

Suggestions: Have your kids enjoy this with a ice-cold glass of milk. You can also add chocolate chips, frost it, or get even more creative with this afterschool snack.
Raspberry Muffin Cookies
For an amazing twist on muffins, you have to try turning Lehi Mills Raspberry Muffin Mix into cookies. They just might be your kids’ favorite cookie. And they’re easier to make than most cookies, especially any recipe from scratch.
Ingredients:
1 Box of Lehi Mills Raspberry Muffin Mix (or any other Lehi Mills Muffin Mix)
⅓ cup of Softened Butter
2 Eggs
Directions:
Preheat the oven to 350 degrees F
Mix the ingredients in a bowl until combined and a dough forms
Drop rounded dough onto an ungreased cookie sheet
Bake for 10-12 minutes until the edges slightly brown
Remove from the oven and let cool

Suggestions: Add white chocolate chips, drizzle with a buttercream glaze, or top with a crumble topping. Either way, you kids will love this twist on our most famous muffin mix.
Easy Pancake Sheet Cake
While pancakes are fairly easy to make, they can take some time watching over and flipping. So why not make it a little bit easier. Try this easy pancake sheet cake recipe to give your kids a unique afterschool snack.
And one of the best parts it you can tailor these the way you like.
Ingredients:
3 cups of water
Toppings of your choice: chocolate chips, fruit, nuts, nutella, maple syrup, etc.
Directions:
Preheat the oven to 375 degrees F
Whisk together the pancake mix and water. Be careful to avoid overmixing.
Pour the batter on to a greased 9x13 cookie sheet and add your desired toppings. We love to add the toppings in sections so there are a variety of options to enjoy.
Bake for 25-30 minutes
After baking you can slice and enjoy while warm.
