  • ½ cup + 2tbsp Milk
  • ⅓ cup Ricotta Cheese
  • 2 tbsp Vegetable Oil
  • 1tsp Pure Vanilla Extract
  • ¼ cup graham crackers, crushed
  • 3 tbsp unsalted melted butter, + extra to cook with
  • Icing sugar, to dust
  • (Optional) 2 tsp Lemon Zest

Cheesecake Filling

  • 12 oz cream cheese
  • 3 tbsp sugar
  • 1 cup whipping cream
  • (Optional) Juice of ½ lemon

Instructions

Once you've gathered your ingredients and let them come to room temperature, it's time to create your dish. Here's how to make cheesecake pancakes:

Pancakes

  1. Sift your dry ingredients together in a medium bowl (flour, sugar, baking powder, and salt)
  2. Add in your lemon zest (Optional)
  3. In another bowl, mix together your milk, ricotta, oil, egg yolk, and vanilla extract
  4. Pour your wet mixture into your dry mixture and mix until combined
  5. Whisk your egg whites in a separate bowl until they form stiff peaks
  6. Fold your egg whites into your batter
  7. Let your batter sit for 20 minutes at room temperature
  8. Melt your butter over medium-low heat in a pan
  9. Spoon your batter in using a ¼ cup measurement
  10. Cook your pancakes until bubbles appear on the surface and the edges darken, then flip
  11. In a bowl, combine crushed graham crackers with your melted butter and set aside

Cheesecake Filling

  1. Beat cream cheese and sugar together until smooth (add lemon juice if you desire)
  2. Add whipping cream in gradual stages
  3. Continue to mix until well combined and stiff

Now you're ready to assemble your dish. In between each pancake, spread a generous layer of cheesecake filling. You might even add some crushed graham cracker in there, but you don't have to if you don't have enough. 

Finally, sprinkle the finished product with crushed graham cracker and icing sugar.
