Monica’s Get Over Your Man Jam w/ Homemade bread
Some people eat a tub of ice cream after a breakup and some people make jam. If you’re anything like Monica in ‘The One With The Jam’ you make batches of jam to get over your man. Because what’s the opposite of Man? Jam.
Try our quick and easy no cook jam recipe to go on your homemade bread. This homemade bread recipe comes from our friend @amberskitchen who is always inspiring us with delicious recipes and kitchen inspiration.
Fresh Quick and Easy Homemade Jam
1 pt fresh Raspberries (about 2/3 cup mashed)
3/4 cup Sugar
3 tsp Real Fruit Pectin
- Boil an 8 oz Mason jar, lid and ring to sterilize.
- Mash raspberries and verify that you have 2/3 cup.
- Add sugar and pectin and mix well to dissolve.
- If texture seems grainy, microwave for 30 seconds and continue stirring.
- Transfer mixture to mason jar place lid and screw on lid.
- Place in freezer until ready to use or in refrigerator if you will use now.
Amber’s Kitchen Homemade Bread recipe
3/4 cup cane sugar
3 cups warm water (baby bottle temperature)
1 1/2 Tablespoon active dry yeast (not instant)
1/3 cup coconut oil, melted (can sub for vegetable oil)
1 egg, beaten
1 Tablespoon salt
7 1/2 to 8 1/2 cups Lehi Mills Turkey bread flour
1. Combine sugar, warm water, and yeast in a large mixing bowl.
2. let stand for 10 minutes while the yeast poofs and dissolves.
3. Add oil, egg, and salt into yeast mixture. Mix to combine.
4. Add flour, one cup at a time, mixing well and kneading well in between. Don’t add all the flour at once, especially towards the end. How much flour you need depends on lots of variables- you don’t want dough that’s too dry. It needs to be elastic and slightly sticky, but not so wet that it leaves moisture at the side of the bowl.
5. Knead for 5 min by hand or 2-3 minutes in a mixer.
6. Cover dough with a clean dish towel and allow it to rise until doubled, about 45 min. Then punch down. Allow to rise for a 2nd time, covered, for 30-45 min.
7. Separate dough into 3 equal sections, or for mini loaves separate each of those 3rds into 3rds again (9 total) and with a rolling pin, roll into sections into a rectangle. With each section, roll it from bottom to top and put seam side down into a greased mini loaf pan. (Or if making 3 larger loaves, use a 4.5×8.5 inch loaf pan). Cover with a towel and let rise 30 minutes or until doubled.
8. Bake at 380 degrees for 20 minutes for mini’s, or 24 minutes for larger loaves. Take out of loaf pans, let cool on a wire rack for at least 30 minutes before slicing.ENJOY these friends themed recipes!
Ross’s Moistmaker Sandwich Variation
Friends has its share of hilarious food moments throughout the series – from Rachel’s unfortunate English trifle to Phoebe’s not-so-original chocolate chip cookies. But no Friends inspired recipes list would be complete without Ross’s famous Thanksgiving sandwich: the Moistmaker. Terrible name aside, just the image of this leftover Thanksgiving sandwich makes your mouth water. Best of all, you don’t have to wait for Thanksgiving to start eating it. You can even substitute the fried chicken for fried turkey if you want to keep it more in line with the Moistmaker.
Try adding some honey mustard for a tangy, savory taste.
To replicate the gravy-soaked moistmaker from Monica’s recipe, try adding a syrup-soaked french toast in between the bacon and the chicken.
Stay true to Ross’s leftovers theme with pancakes/waffles leftover from breakfast
Prep Time: 1 HR 30 MIN
Total Time: 1 HR 30 MIN
24 slices bacon
1 tablespoon butter
1 medium onion
4 boneless skinless chicken breasts (4 oz each)
¼ teaspoon salt
1/8 teaspoon freshly ground black pepper
1 ½ cup Lehi Mills Waffle mix
½ cup vegetable oil
2 tablespoons butter
1 tablespoon vanilla extract
1 ½ cups water
Cook bacon in 12-inch skillet over low heat for 8-10 minutes. Turn occasionally. Cook until crisp. Drain on paper towels and set aside.
Melt 1 tbsp butter in 6-inch skillet over medium heat.
Once butter is melted, cook onion in it for about 10 minutes until golden brown. Stir frequently. Set aside.
Place chicken breast smooth side down in between pieces of waxed paper or plastic wrap. Use a meat mallet or rolling pin to gently pound chicken until it’s about ½ inch thick. Cut chicken in half and season with salt and pepper. *
Place 1 ½ cup of Lehi Mills Waffle mix in shallow bowl. In another bowl, beat 2 eggs and then dip chicken into egg mixture. Coat chicken with Lehi Mills Waffle mix.
Heat ¼ cup oil over medium heat in 12-inch nonstick skillet.
Add chicken to hot oil and cook 8-10 minutes until coating is golden brown and center is no longer pink. Turn once.
Heat maple syrup and 2 tbsp butter in 1-quart saucepan to boiling. Remove from heat and stir in bourbon (or vanilla extract). Set aside.
Mix waffle ingredients in bowl.
Spray waffle iron with cooking spray. Pour around 2/3 cup batter onto center of waffle iron (amount will change based on size of waffle iron).
Close lid and bake for around 5 minutes. Make sure waffle is golden but not burned. Remove waffle and repeat until you have 8 waffle sections.
Assemble in this order: waffle section, 3 bacon slices, 1 chicken, onion slices, and waffle section. Cut sandwiches in half.
Set maple-bourbon-butter syrup aside for dipping or pour over chicken and waffles.
14. For tangy flavor, add some honey mustard.
*Alternatively, you can also cut the chicken into ½ inch slices.
Joey Doesn’t Share Pizza
Pizza has been an important food throughout the popular sit-com. We had to add it to our friends inspired recipes. There were so many moments, it is hard to narrow it down to just one. Pizza was there for first kisses, break-ups, and attempts to flirt with pizza delivery girls. Why not make your own special 25th-anniversary pizza with this fun and simple pizza recipe? (Sharing optional!)
1 cup warm water
3 cups Lehi Mills Peacock Flour
1 tbsp yeast (fast-rising)
2 tbsp oil
1 tsp salt
1 tsp sugar
Mix warm water with yeast in a bowl and let sit for a few minutes.
In another bowl, mix flour, oil, salt, and sugar.
Add water and yeast mixture.
Cover the dough and let it rise for 5 – 10 minutes (for thicker crust, let it dough rise for 20 – 30 minutes)
(Makes enough dough to fill a cookie sheet!)
Pizza dough (see above)
8 oz tomato sauce
1 ½ c mozzarella cheese
Toppings as desired
Preheat oven 425 degrees
Spread pizza dough over greased pan or cookie sheet
Pour and spread tomato sauce over dough
Sprinkle Italian seasoning over sauce
Add cheese, pepperoni, and other toppings
Cook in the oven for 20 minutes
Rachel and Ross Break-up Variety: chop up anchovies into small pieces and add them to the sauce.
There can’t be a list of Friends inspired recipes without a cheesecake themed dessert. Hopefully, you’re not eating these cheesecake pancakes off the floor. If it came down to it though we wouldn’t blame you… they’re that good. You might even have to finish it in one sitting like Chandler and Rachel unless you’re ready to share.
2 cups milk
1 tsp. vanilla
2 cups Buttermilk Pancake mix
1 (8 oz) package cream cheese, softened
1/2 cup powdered sugar
1/4 cup greek yogurt
1 teaspoon vanilla
Pinch of salt
1/2 cup whipped topping
Mix buttermilk pancake mix with mil
k and vanilla. Stir until just combined. Cook over medium heat until golden.
While the pancakes are cooking, prepare the cheesecake filling. In a stand mixer, whip the softened cream cheese, powdered sugar, Greek yogurt, vanilla, and salt until smooth. Add in the whipped topping and whip until lightened up.
Make each pancake stack by layering a pancake, smoothing a heaping spoonful of filling on top of each pancake, and repeating to desired stack height.
Top with Lehi Mills Raspberry Syrup and fresh raspberries. Enjoy!
Joey’s Meatball Sandwich
THE BEST SANDWICH IN THE WORLD… Think of Joey’s classic meatball sub with a delicious twist. Swap the bread for WAFFLES and you’re in for an am-I-eating-breakfast-or-dinner-i-don’t-care-because-it’s-that-dang-good kind of meal. Like Joey you might feel that this is a sandwich worth taking a bullet for.
6 Frozen meatballs
Favorite tomato sauce
Cook frozen meatballs according to package instructions.
While the meatballs are cooking, follow directions on waffle box to prepare 2 waffles. Turn broiler on high.
Once the meatballs and waffles are cooked, assemble the sandwiches. Take each waffle and split down the middle. The halves will be the top and bottom of the sandwich. Set one half down on a cookie sheet lined with foil.
Top with 3 meatballs, marinara sauce, and a handful of mozzarella cheese. Place the other waffle half next to its match. Repeat for the other waffle sandwich.
Place open face sandwiches in the oven until cheese is melted and sauce is warmed through. Watch it carefully, because it will melt quickly!
Remove sandwiches from the oven and replace the waffle tops. Garnish with fresh basil as desired. Enjoy these Friends inspired recipes !
