Elvis Presley Pancakes

Today’s banana pancakes with peanut butter honey sauce were inspired by Elvis Presley. You might not know that he had some… interesting eating habits. One of his very favorite sandwiches was a fried peanut butter and banana sandwich with bacon.

These pancakes are a lightened-up version, but you can still serve them with a side of bacon if you want to stay true to The King’s favorite sandwich. They’re a lot healthier than what Elvis would eat, but surely he would approve 😊

Use Lehi Mills Original Pancake Mix for a quick and easy pancake that’s as delicious as it is convenient!

Elvis Presley Pancakes

Ingredients

Banana Pancakes

  • 2 cups Lehi Mills Original Pancake Mix
  • 2 cups water
  • 2 ripe bananas

Peanut Butter Honey Sauce

  • ¼ cup natural peanut butter
  • 2 tbsp honey
  • 4 tbsp almond milk
  • 1 tsp vanilla extract
  • Dash of cinnamon
  • Chopped peanuts

Directions

To make the pancakes, mash the bananas with a fork in a medium bowl. Add the pancake mix and the water and stir until slightly lumpy.  Cook the pancakes until golden.

To make the peanut butter honey sauce, mix the peanut butter, honey, almond milk, vanilla extract, and cinnamon in a small bowl until well combined. Add more almond milk if it’s too thick or more peanut butter if it’s too runny.

Each pancake with a generous drizzle of peanut butter honey sauce and chopped peanuts. Serve with a side of bacon and enjoy!
