Crowd Pleasing Brownie & Mousse Parfaits

Want a dessert idea you can prep ahead of time? Chocolate mousse parfaits with rich brownie chunks and Cadbury eggs are so easy, and since they’re served cold, you can make them well ahead of any party or event you have planned. When it’s time to serve, add a dollop of whipped cream and sprinkle some additional Cadbury eggs on top.

Brownie & Mousse Recipe


For the Brownies:

For the Mousse:

  • 3 eggs
  • 2.5 ounces of baking chocolate, semi sweet
  • 2 ounces of baking chocolate, milk chocolate
  • 7 tablespoons of butter, softened
  • 1/2 cup of cream
  • 6 tablespoons of fine white sugar
  • 1/2 teaspoon of vanilla

For the Parfait:

  • whipped cream
  • Cadbury eggs


For the Brownies:

  1. Preheat oven to 350 degrees.
  2. In a medium bowl combine brownie mix, water, and vegetable oil. Beat for 2 minutes on medium speed.
  3. Pour into a greased 9×13 pan. Brownies should be slightly thinner than normal.
  4. Bake for 20 minutes, or until cooked through. Once cooked, set aside and let cool.
  5. Cut or tear into small chunks and set aside.

For the Mousse:

  1. Separate the egg, placing the whites in a large bowl and the yolks in a smaller bowl. Whisk the yolks until well combined. In a microwave, melt the butter and chocolate, being sure to mix contents every 30 seconds until melted.
  2. Add the vanilla and cream to a large bowl, Beat until stiff peaks form. Add the fine white sugar to the egg whites and beat until peaks form. Fold egg yolks into cream; only stir 6 times. Pour lukewarm chocolate mixture into cream and stir 6 times.
  3. Fold the egg whites into the chocolate mixture until well incorporated.

For the Parfait:

  1. In small glasses, add the parfait ingredients — alternating between brownie chunks, spoonfuls of mousse, and Cadbury eggs — until the glasses are full.
  2. Refrigerate for 5 hours or until ready to serve. Top with whipped cream and crushed Cadbury eggs.
