Celebrate the one you love with two treats that you love. Cheesecake AND Pancakes. Two of the greatest things to have cake in their name, and the subjects of our special Cheesecake Pancakes recipe today.

We took these two favorites and combined them into one delicious treat that you can serve as a sweet breakfast or a super tasty dessert. The best thing is how easy these Cheesecake Pancakes are to make. With Lehi Mills, just add water pancake mix, and an easy to make cheesecake topping, you will have a delicious treat in four quick steps.

Don’t forget to top the Cheesecake Pancakes with fresh raspberries and Lehi Mills Gourmet Raspberry Syrup for an extra melt in your mouth taste.

Cheesecake Filling

  • 1 (8 oz) package cream cheese, softened

  • 1/2 cup powdered sugar

  • 1/4 cup greek yogurt

  • 1 teaspoon vanilla

  • Pinch of salt

  • 1/2 cup whipped topping

  1. Mix buttermilk pancake mix with milk and vanilla. Stir until just combined. Cook over medium heat until golden.

  2. While the pancakes are cooking, prepare the cheesecake filling. In a stand mixer, whip the softened cream cheese, powdered sugar, Greek yogurt, vanilla, and salt until smooth. Add in the whipped topping and whip until lightened up.

  3. Make each pancake stack by layering a pancake, smoothing a heaping spoonful of filling on top of each pancake, and repeating to desired stack height.

  4. Top with Lehi Mills Raspberry Syrup and fresh raspberries. Enjoy!
