  • 1 cup of butter, softened
  • 3/4 cup of water
  • 2 tablespoons lime juice
  • 3 tablespoons lime zest
  • 1/4 cup of sugar

  • 1/2 cup of butter, softened
  • 2 cups of powdered sugar
  • 1 1/2 teaspoons of vanilla
  • 3 tablespoons of milk
  • 1 tablespoon of lime zest

Directions:

  1. Preheat the oven to 350 degrees.
  2. In a medium bowl combine sugar cookie mix, softened butter, and water. Use a kitchen mixer or your hands to start to knead the dough together. While kneading, add in the lime juice and lime zest.
  3. On a floured surface, roll out the sugar cookie dough to 1/4 inch thickness. Use a circle cookie cutter to punch out cookie disks, and place them on a greased or lined cookie sheet.
  4. Sprinkle 1 tablespoon of sugar on top of the uncooked cookie before placing the cookie sheet in the oven. Bake for 8-10 minutes and remove from oven once finished.
  5. In a small bowl, beat together the buttercream ingredients for 2 minutes. Spoon the mixture into a piping bag and carefully pipe it onto a cooled cookie.
  6. Top your key lime copycat cookie with a lime wedge; before consuming, we recommend squeezing the lime wedge onto the cookie!
